Prepare jaggery syrup (if using jaggery)

  1. In a large mixing bowl, add wheat flour, cardamom powder, coconut, fennel seeds, and ghee.
  2. Mix until the flour resembles breadcrumbs.
  3. Gradually add jaggery syrup (or sugar water) and knead into a stiff dough.
  4. Let the dough rest for 10-15 minutes.

Shape the Thekuwa

  1. Divide the dough into small balls and flatten them into discs.
  2. Use a wooden mold, fork, or knife to create decorative patterns (optional but traditional).

Deep fry

  1. Heat oil or ghee in a deep pan on medium heat.
  2. Fry the Thekuwas in batches until they turn golden brown and crisp.
  3. Remove and drain on paper towels.

Cool and store

  1. Let them cool completely before storing in an airtight container.
