  1. Heat mustard oil until it lightly smokes (if using).
  2. Add fenugreek seeds and let them turn black.
  3. Add garlic and ginger. Stir for a few seconds.
  4. Add turmeric powder and turn off the heat.
  5. In a bowl, put the boiled potato pieces.
  6. Pour the spiced oil over the potatoes.
  7. Add cumin powder,red chili powder, chopped green chilies, salt
  8. Mix everything well so the potatoes are coated with the spicy mixture.
  9. Sprinkle fresh coriander leaves. Serve with chiura, sel roti, or enjoy as a snack.
