Prepare the batter

  1. Rinse rice well and soak for 10-15 minutes. Drain before cooking.
  2. In a heavy-bottomed pot, bring milk to a boil.
  3. Lower the heat and stir occasionally to prevent burning.
  4. Add the soaked rice to the boiling milk.
  5. Simmer on low heat, stirring often, for 30-35 minutes until rice is soft and the milk thickens.
  6. Add sugar and crushed cardamom. Stir well and let it simmer for another 5 minutes.
  7. You can roast nuts and raisins in ghee and add them in, or just add them raw toward the end.
  8. Serve warm or chilled, as you prefer. Garnish with nuts if desired.
