Wo is a popular dish among Newari community which is served during special ocassions like festivals and jatra. It is made from lentils that are soaked, ground into a paste, and mixed with simple spices like salt, garlic, ginger, and cumin. The paste is then cooked in a pan to make soft, round pancakes that are golden brown. Wo is often eaten during festivals and special family events. Sometimes, people add meat or egg on top. Wo is healthy, full of protein, and goes well with pickles, beaten rice, or tea.

Soak the lentils

  1. Wash the lentils well and soak them in water for 6-8 hours (or overnight).

Prepare the batter

  1. Remove the lentil skins.
  2. Grind the soaked lentils into a smooth, thick paste using little water.
  3. Add salt, cumin, ginger, garlic. Mix well.

Cook the wo

  1. Heat a little oil in a pan.
  2. Pour a small amount of batter onto the pan and spread gently into a round pancake shape.
  3. Let it cook on medium heat until the bottom turns golden brown (about 3-4 minutes).
  4. Use a cup or glass to cut out round wrappers.
  5. Flip and cook the other side until done.
