Cook the meat

  1. Boil or grill the buffalo meat until tender. Let it cool a bit and cut into small pieces.

Prepare the spice oil

  1. Heat mustard oil in a pan.
  2. Add fenugreek seeds(methi) and let them turn black.
  3. Remove from heat and let the oil cool a little.

Mix the choila

  1. In a bowl, add the meat pieces.
  2. Add garlic paste, ginger paste, cumin powder, coriander powder, chili powder, green chilies, lemon juice, and salt.
  3. Pour the warm oil with fenugreek seeds over the meat and mix everything well.

Serve

  1. Garnish with fresh coriander leaves and enjoy with beaten rice (chiura) and pickles.
