Heat oil and temper spices

  1. Heat mustard oil in a pan until lightly smoking.
  2. Add fenugreek seeds and let them turn dark brown.
  3. Add garlic and green chilies. Stir until garlic is golden.

Add saag

  1. Add spinach and stir well.
  2. Cook on medium-high heat for 2-4 minutes until wilted but still bright green.

Season and Serve

  1. Add salt to taste.
  2. Serve hot with dal-bhat or roti.
