Prepare the batter

  1. Grind the soaked rice into a smooth, slightly thick batter using milk or water.
  2. Pour the batter into a bowl. Add sugar, ghee/butter, and cardamom powder. Mix well. The batter should be thick enough to pour in rings but not too runny.

Fry Sel Roti

  1. Heat oil or ghee in a deep pan on medium heat.
  2. Pour the batter carefully in a ring shape directly into the hot oil (traditionally done using hand).
  3. Fry until golden brown, turning once to cook both sides evenly.
  4. Remove and place on paper towels to drain excess oil.

Serve

  1. Enjoy Sel Roti warm or at room temperature with or curry.
