Soak Gundruk

  1. Soak gundruk in warm water for 10-15 minutes until soft.
  2. Drain and lightly squeeze out the water.

Tempering

  1. Heat mustard oil until it smokes lightly.
  2. Add fenugreek seeds — let them turn dark brown.
  3. Add garlic, ginger, and green chilies. Stir for a few seconds and turn off heat.

Mix

  1. In a bowl, combine gundruk, the tempered oil mixture, cumin powder, chili powder, salt, lemon juice, mix well and enjoy.
